The game will always spawn you to your "Home" garage. To change where you spawn, you will need to change your "Home" garage. Get in the truck you want to drive then "jump" to the garage you want to drive from in garage manager. Bear in mind that the cargo on offer may change whilst you are moving to that garage.
Upgrading the truck is exactly the same as buying the high end model. If you look into the dealership, you will find you can customize any truck there to your likings, just as in the tuning garage.
